Reports to:

Executive Chef

Position Summary:

Responsible for all food items for the assigned station prepared in the kitchen of a foodservice establishment. Portions food items prior to cooking, such as steaks or fish fillets. Other duties include carving and portioning roasts, plating and garnishing cooked items, and preparing appropriate garnishes for broiled or roasted foods. Responsible for maintaining a sanitary kitchen work station.

 

 

Responsibilities:          

1.            Complies with all portion sizes, quality standards, department rules, policies and procedures.

2.            Identifies and selects cuts of meat, poultry, shellfish, fish, game or vegetables used for assigned food items.

3.            Prepares items by marinating, seasoning and/or portioning.

4.            Prepares garnishes.

5.            Prepares other items attendant to the assigned station such as hot appetizers, hot sandwiches, skewered items and items for gratinee.

6.           Cooks and plates meats, poultry, shellfish, fish, game or vegetables along with appropriate garnish.

7.            Roasts, carves and plates meats, poultry, shellfish, fish, game or vegetables along with appropriate garnish.

8.            Maintains a sanitary work station environment.

9.            Selects and uses knives, hand tools, utensils, and equipment to portion, cut, slice, broil, roast, carve, skewer, gratinee, garnish, maintain holding temperature, grill or otherwise produce food in the broiler station.

Prerequisites:

Education:

·High school graduate or equivalent desired.

·Must be able to communicate clearly and listen attentively to supervisors, employees, dining room staff and guests. 

 

Experience:           

 

·A minimum of one year in a food prep position.

·Must be customer sensitive and possess a sense of timing so that different courses may be served at the proper time.

 

Physical:

·Requires bending, climbing, reaching

·Must have the ability to stand for periods of 4-6 hours

·Must be able to exert fast-paced mobility for periods of up to five hours in length.

·Must have the ability to lift pans and trays frequently weighing up to 40 pounds.
